This authentic Italian Lemon Rosemary Grilled Salmon is a bright, herb-infused Mediterranean dish featuring fresh rosemary, garlic, and lemon. Perfect for a healthy weeknight dinner or a summer gathering, it's light, flavorful, and ready in under 30 minutes.


Ingredients (Serves 2)

You will need two salmon fillets, about 6 ounces each. For the marinade, prepare two tablespoons of extra virgin olive oil, the juice and zest of one fresh lemon, two cloves of minced garlic, and two sprigs of finely chopped fresh rosemary. Season with half a teaspoon of sea salt and a quarter teaspoon of freshly ground black pepper. For garnish, lemon wedges and fresh parsley are optional.


Instructions

Start by preparing the marinade. In a small bowl, combine the olive oil, lemon juice, lemon zest, garlic, chopped rosemary, salt, and pepper. Mix well until emulsified.

Place the salmon fillets in a shallow dish or ziplock bag. Pour the marinade over the fillets, ensuring they are fully coated. Cover and refrigerate for 30 minutes to allow the flavors to infuse.

While the salmon is marinating, preheat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

Remove the salmon from the marinade and place it skin-side down on the hot grill. Cook for about 4 to 5 minutes per side, depending on the thickness of the fillets, until the salmon is opaque and flakes easily with a fork.

Transfer the grilled salmon to plates and garnish with fresh lemon wedges and parsley. Serve immediately with your choice of side dish, such as grilled vegetables, roasted potatoes, or a crisp arugula salad.
