Grilled Salmon with Balsamic Reduction

(Salmone alla Griglia con Riduzione di Aceto Balsamico)

Grilled Salmon with Balsamic Reduction is a refined yet simple Italian dish, where rich, flaky salmon meets the sweet-tart depth of a silky balsamic glaze. It’s perfect for elegant dinners, date nights, or when you want gourmet flavor with minimal effort.

Ingredients (Serves 2)

Begin with two salmon fillets, each about 6 ounces. Season them with half a teaspoon of sea salt, a pinch of black pepper, and a tablespoon of extra virgin olive oil. For the balsamic reduction, use half a cup of good-quality balsamic vinegar and one tablespoon of honey or brown sugar. Optional garnishes include fresh thyme, arugula, or a sprinkle of sea salt flakes.

Instructions

Season the salmon fillets with salt and pepper, then rub with olive oil. Set aside at room temperature while you prepare the reduction.

In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a gentle boil, then reduce the heat and simmer for about 10 to 12 minutes, stirring occasionally, until the mixture thickens into a syrupy consistency that coats the back of a spoon. Remove from heat and set aside to cool slightly.

Preheat your grill or grill pan to medium-high heat. Lightly oil the grates, then place the salmon skin-side down and cook for 4 to 5 minutes per side, or until the salmon is opaque and flakes easily with a fork.

Transfer the grilled salmon to serving plates. Drizzle each fillet with the balsamic reduction and garnish as desired. Serve with roasted vegetables, grilled polenta, or a simple salad of arugula and shaved Parmesan.

Cooking Tips

Use a good aged balsamic vinegar for richer flavor and smoother texture. Be careful not to over-reduce the glaze, as it will continue to thicken as it cools. You can also add a sprig of rosemary or a clove of garlic to the reduction while it simmers for added depth.
